Ingredients:
1 lb. boneless chuck, cut in 1/2 inch pieces or 1 lb. beef stew meat
1 to 2 tbsp oil
1 28 oz. can diced tomatoes
2 tbsp garlic powder
2 carrots, sliced
2 celery ribs, sliced
4 cups water
1/2 cup red wine
1 small onion, coarsely chopped
4 beef bouillon cubes
1 tsp black pepper
1 tsp rosemary
1/2 tsp thyme
1 bay leaf
1/4 to 1/2 cup couscous
Directions:
1. Brown beef cubes in oil in skillet
2. Place vegetables in bottom of slow cooker. Add beef.
3. Combine all other ingredients, except couscous, in separate bowl.
Pour over ingredients in slow cooker.
4. Cover and cook on LOW 6 hours.
5. Stir in couscous. Cover and cook an additional 30 minutes.
Yield: 8 to 12 servings
